  1. Prepare pie dough and refrigerate for at least 30 minutes.
  2. When dough is chilled, roll the dough as you would a pie crust – about 1/8 inch thick. Using a 2.5 or 3 inch round glass or cutter, cut 20 circles and place on a baking sheet lined with parchment paper. Using a small star cookie cutter, cut shapes out of 10 circles. Using the scraps, roll 4 more circles, cutting stars out of two of them. Return to the refrigerator to chill.
  3. Preheat oven to 375. Slice the apple into paper thin slices and then cut the slices in half to make small triangles. Toss with lemon juice and sprinkle with cinnamon/sugar mixture.
  4. In a medium saucepan, place the caramel and 2 Tablespoons of milk over medium heat stirring constantly. Stir for about 3-5 minutes until you get a smooth caramel sauce.
  5. Place caramel sauce into a bowl, stir in vanilla and set aside.
  6. Remove circles from the refrigerator and place apples on each bottom circle. Place enough apples to fill the circle, but try not to pile them too high. Drop one Tablespoon of caramel sauce directly on top of the apples. The sauce will be hot, so you probably will want to use another spoon to scrape it off. This is a messy step, but do the best you can. If your caramel starts to become too thick, you can warm it in the microwave for 10-15 seconds.
  7. Gently place each star top onto the apples and caramel and lightly press the edges together.
  8. You will find that some of the edges will not press together and that’s ok. These are not sealed shut like other mini pies. Brush with milk and sprinkle with turbinado sugar. Bake for 30 minutes at 375. Eat and be merry!
